Greens for hot, breezy summers


When it’s too hot to cook, says Tijen İnaltong, there’s nothing like scrunchy salads to cool you down

When summer comes, Turkish coasts welcome guests with the aroma of mountain herbs, which is one reason they fall in love with Anatolia. Sage, oregano, thyme, mint... the symbols of summer cover the earth like a perfume-scented, silken cloth that is unforgettable. It is hot outside. The sun makes you tired. You get lazy. Too lazy to cook- or even eat. Then you remember the greens. Greens of the breezy Mediterranean summers which will immediately cool your body to find its balance. They are the most appetising ingredients of hot summer days. Imagine a bowl of salad, of lettuce, rocket, common cress, purslane...

When kept in cool water for a while, these Mediterranean greens wake up from their heat-induced nap, stretch a bit and become as crunchy as the crust of bread which just came out of the wood burning oven. After being strained, they are ready for their favoorite pals, tomatoes, cucumbers, peppers, sometimes purslane – gypsies of the fields – and even feta cheese to join in a cooling salad, which can become a lunch itself, or the masterpiece of a colorful dinner table. Even breakfast tables can benefit from a bowl full of fresh greens. They bring up memories of the summer rituals, picking herbs from the garden, buying bunches of them from the villagers at the farmers’ market or accepting a basketful of them from your neighbour.
